Pour the mixture into the crust and sprinkle with the scallions. Put into oven and bake for about 45 to 50 minutes. Un mold the finished quiche, remove wax paper, and enjoy!

Biscuits with Pancetta, Collard Greens, Marbleized Eggs, and Espresso Aioli (
Ingredients to make Buttermilk Biscuits
●5 cups of flour
●5 tbsp. Sugar
●2 tbsp. Baking powder
●1 tbsp. Kosher salt
●10 tbsp. Unsalted butter, frozen with 4 tbsp. of butter melted
●1 3/4 cups of buttermilk
●2 tbsp. Of honey

For the Sandwich Toppings
●7 oz. of thinly sliced pancetta (about 32 slices)
●1 lb. of collard greens that are trimmed and roughly chopped
●1/2 of a small Vidalia onion, which is thinly sliced
●3/4 cup of chicken stock
●1 tsp. Dijon mustard
●1 clove of garlic that is mashed into paste
●8 eggs plus about 1 egg yolk
●1/2 cup of canola oil
●1 1/2 tbsp. Espresso
●1/4 cup of minced chives
●Kosher salt and freshly ground pepper for taste

1.To start off making your biscuits, heat the oven to about 400 f. Whisk together your flour, sugar, baking powder, and salt into a bowl. Use a box grater and grate your frozen butter (against the course side) into the flour mixture, combine the butter and the mixture together. After you have mixed it up it should reach a dough like consistency. Transfer your dough to a lightly floured surface and work to pat your dough into a 7” by 9” rectangle that is about 2 inches thick. After this use a 4-inch round cutter so that you can cut out 4 biscuits, reusing the scraps if you have any. Place the cut-out biscuits on a parchment paper lined baking sheet. Bake your dough until they are about golden brown (around 18-20 minutes). Stir in your melted butter and honey into a bowl and then brush over that spread onto your hot biscuits. Return them back into the oven and cook an additional 5 minutes more until they are golden brown.
2.Prepare the pancetta by arranging the slices onto a single layer on 2 baking sheets. Bake them for about 5- 7 minutes until they are crispy. Use the fat from the pancetta later, so pour into another bowl and set aside.
3.In order to make the braised collard greens begin by bringing a large pot of salt water to a boil. Cook in your greens for about 4-6 minutes or until they are tender than drain. After heat your skillet and pour your pancetta fat into the skillet over medium heat. Cook in the onion until it is soft. Add in your greens, salt, pepper, and stock. Simmer until the stock has evaporated (10-12 minutes).
4.Whisk mustard, garlic, 1 egg yolk, and salt into a bowl for the espresso aioli. As you are whisking, slowly drizzle your oil and espresso until the aioli has emulsified.
5.For your marbleized eggs, melt in 1 tbsp of butter into an 8-inch non-stick skillet over medium and then crack 2 eggs into a skillet. Break the yolks. Use the tip of a spatula and gently swirl the yolks into egg whites, making a flat omelet (do not scramble eggs). Cook for about 3 minutes. Add in 1 tbsp. of chives and salt. Fold the omelet into quarters and transfer into a plate and keep it warm. Repeat to make 4 omelets total.
6.Assemble sandwich and enjoy!
